4 tsp - baking powder

¼ cup (4 tablespoons) - melted butter

1 Banana

11/2 cup - all-purpose flour

1/8 tsp salt

butter and maple syrup for garnishing.

Instructions:

Step: 1

In a mixing bowl, crack in the egg. Then add 1 cup milk, add 4 teaspoons baking powder. Mix it a little, and 1/8 teaspoon salt. Add ¼ cup (4 tablespoons) of melted butter. Note: Melted butter must be in room temperature. Mix them well till all the lumps are dissolved. Set it aside.

Step 2

Take an over-ripped banana (large). Mash it to make smooth paste. Add the egg-milk mixture and gently mix it with a spatula.

Step 3

Sieve 1 ½ cup of all-purpose flour in a mixing bowl and make a dip in the middle. Add the banana-egg-milk batter to it little by little and keep mixing it until it becomes smooth. Now add another egg and beat for 1 minute. As you can see there is no lumps, and the batter is smooth. We got perfect consistency.

Step 4

Heat up a nonstick fry pan on low-medium heat. Pour 1/3 cup of batter on the pan. Wait 2/3 minutes then flip the cake. One side turned into golden brown color. Let it cook for another 2/3 minutes, then take it off the pan. Repeat these steps for remaining batter.

Serve the pancakes with butter and maple syrup or corn syrup. Enjoy the yummy Banana Pancakes.

Notes:

1. You may substitute butter with cooking oil.
2. You may add little sugar if you are not using syrup for garnishing.
3. I used electric beater, you may use hand whisk too.
