This special Valentine cake can be made without any special cake mold.

 

Ingredients:

Cake Batter:

All-Purpose flour - 3 cups

Sugar - 1 cup

Eggs - 10 large

Baking powder - 2 tsp

Milk – ¼ cup

Vanilla Extract - 2 tsp

Oil – ¼ cup

Cocoa Powder - 1 tbsp

 

 

Icing and Layer:

Cream Cheese 8 oz (room temp)

Butter ½ cup (room temp)

Sugar 3 cup

Vanilla Essence – 1 tsp (optinal)

Food color- Red, Yellow

 

Mirror Glaze:

Condensed milk – 1 Can (14oz)

White Chocolate - 1 cup

Gelatin – 1 tablespoon (soaked in water 15 min)

Sugar 1 cup

 

Decorating:

Semi-sweet Chocolate – ¼ cup

 

Method

 

 Prepare Cookie Trays

·                     line 2 trays 12 inches X 18 Inches with baking paper and keep aside

 

 Prepare batter

 

Step 1

  • separate egg yolk from the white
  • beat the egg white till stiff peak forms
  • add sugar in batches and mix till the sugar granules completely dissolves.
  • Add the egg yolk and beat for a minute.
  • sift in 1 cup flour and mix to get it incorporated.
  • In another bowl add the oil, milk, and vanilla essence.
  • Pour this liquid mix in the egg batter and mix it together.
  • Add remaining flour and gently fold at one direction until well incorporated.
  • Pour half of this batter in one of the prepared baking trays, spread, and tap 3-4 times to release bubbles. ,’

 




Step 2

 

·         Sift 1 tablespoon cocoa powder to the remaining batter

·         Mix until well incorporated.

·         Pour this batter on the other prepared baking tray, spread, and tap 3-4 times

 

 Baking

 

·                     bake these in a preheat oven at 180 C/ 355 F for 10-12 minutes

·                     remove the cakes immediately from the tray and allow this to cool completely

·                     cut a heart shape baking sheet, and use it cut and shape 4 pieces of cake layers.

 

Note

 

·                     baking time may vary depending on the oven

 

Icing and Layer Cream preparation:

 

·         Using an electric mixer, beat the cream cheese until smooth.

·         Add the soften butter and beat until fluffy and lighter color,

·         about 3 minutes on medium speed.

·         With the mixer running on low speed to start, slowly add in 2 cups of the powdered sugar.

·         Use a knife or spatula to spread the frosting between 2 layers and a thin layer of top cover.

 

Note: Refrigerate the cake for 30 minutes while making the mirror glaze.

 

Glaze making:

 

·         Soak 1 tablespoon gelatin powder in 1 cup cold water.

·         Add 1 can Condensed milk and 1 cup White Chocolate in small stock pot.

·         Pour the soaked gelatin water to it.

·         add the sugar and cook on medium heat until it becomes smooth.

·         Strain the liquid glaze to remove bubbles.

·         Add food color and strawberry syrup for flavor.

 

Let it cool down to touchable temperature.

Pour the glaze over chilled cake. Mix colors to bring vibrance.

Decorate with chocolate garnish.

This is such a lovely surprise for Valentine or Anniversary.
